Return only one Zarr dataset

I'd be great to return just one dataset in the out directory.

• open_dataset(out_dir) would always work
• same with open_dataset(result_url) after pushing the result to S3
• required to create a STAC catalog with just one item see Use STAC catalog #82

Couldn't we produce an STAC Catalog with one Item and multiple Assets.
We are might want to also output auxillary information even after combining the different orbits.

In what dimensions do you expect the auxillary information to be?

For now the output would have the same x and y coordinates and we could actually combine this to a single zarr file.
