What is this really demonstrating? I dont see how this is demonstrating using ASP.NET Identity?

This demo shows how to use Identity with ExtCore-based app. I think there is no need to show the Identity's functionality itself because it is covered by other tutorials.

Don't the following lines demonstrate the Identity usage?

It uses UserManager<ApplicationUser> which is provided by Identity.
