Rename `JsonEOFException` as `UnexpectedEndOfInputException`

As part of bigger exception refactoring, we can rename this exception name with more generic one, as well as move it under src/main/java/com/fasterxml/jackson/core/exc; this because this exception is not quite as widely used as many others.
