Add attributes to differentiate land data arrays

So far we have processed a few different types of land datasets

• Segment maps, with categorical data in each pixel
• Pixel level data e.g. percentages

I suggest we use the xarray.Dataset attrs dictionary to identify the type of dataset by adding a data_type key
