Stacking Operation ( And possibly others ) create FITs files that can't be opened in AstroImageJ

User reported that they created a stacked fits file and then couldn't open it in AstroImageJ

In the Banzai pipeline curtis mentioned an update to astropy broke fits headers.
fits-validation-tool should be used to check that datalab fits files are valid, could also be used to debug this issue
