Update AICSImage Citation

Hey @jxchen01!

because i saw you had it in your paper (thank you ❤️) and because someone asked us for and we just updated our preferred citation on the aicsimageio readme.

Would you mind updating the aicsimageio citation where ever you have it in the related repos? I tried to find the auto-paper builder stuff but could not.
