Improve CI/CD pipelines

Right now, there are some failures in the CI/CD. Let's take advantage of this and:

• Update to hashed versions
• Split across multiple workflow files
• Check for pipelines security

I would suggest that we focused on points 1 and 3.

Point 2 implies a lot of code duplication IMO. I would strongly suggest to avoid it. Issues on CI/CD have already been addressed with #1073 and #1072
