These questions are very wide. There are a wide variety of satellites. You must set up the observation scheme that fits the one you are interested in. This generally means setting up objects named "sensor_response", but perhaps not.

Limb observations in ARTS are purely geometrical. Just use a limb viewing line of sight for the position you place your sensor/observer.
