I would like to use this library in a project that is licensed under a MIT license. This is currently not possible, due to the GPL license.

Would you consider switching to the LGPL license, which was designed specifically for this use case?

I might be able to do this. I'll have to look into it. But if yours is a commercial product I am not sure I would see any reason to do so.

No, not a commercial product. An open source research project.

Note, that the MIT license is not a commercial license. It is basically the simplest and least restrictive open source license you can have.
