plotly to matplotlib Contour Graphics #575

Describe the Problem

With the switch from plotly to matplotlib, some large differences are seen in the contour graphics for the plotly vs matplotlib versions. Graphics are included in the comments. The first graphic is the plotly version and the second is the matplotlib version.

In conversation with George McCabe, this may be due to differences in the way that they handle colors. In conversation with Michelle, it may be worth determining if switching to pcolormesh helps this behavior,

Expected Behavior

The graphics should produce similar results with the same number of contours.
