chore: bump ejs and spectron

Removes [ejs](https://github.com/mde/ejs). It's no longer used after updating ancestor dependency [spectron](https://github.com/electron/spectron). These dependencies need to be updated together.


Removes `ejs`

Updates `spectron` from 5.0.0 to 19.0.0
