[Dev UI] middleware config - support complex object inputs

Currently modelrefs are not able to be configured properly in the "fallback" middleware.

Won't fix for now, as it works with strings as well (its an anyOf). Thus far we've avoided arrays of objects, so we'll punt until its really needed.
