Check which matplotlib backends work and update docs accordingly

It seems from https://github.com/samthiele/hylite/blob/b439c14d9b88d52eb3fab960ec0bd33c3af31570/hylite/hyimage.py#L704 that roipoly does not work with all matplotlib backends. Check working backends and update docs and example code accordingly
