Ensure that the project remains up to date and functional with newer Java versions

Describe the feature you're interested in

As Java 25 is the latest LTS version, I think that we should start testing(and releasing) the project using Java 25

The work involved should be very similar to #490

Additional context

We may need to upgrade some our test dependencies, in particular the ones that use ByteBuddy (ie: Mockito) before this can be completed

For example mockito/mockito#3712 may need to be released first
