Freshen the Project History

Looking at #579 made me realize the Project History and funding are pretty dated.
We should freshen them up.

And then Peter Sobolewski came in and was all like "guys I have one of those cool new M1 laptops I don't know what the hell I'm doing but I got napari working natively check it out" and he quickly became among the most productive members of the core team.

Love it! Things like the Project History, Mission and Values, or @jni's old blog are actualyl a big reason I enjoyed learning more about napari. Just felt more human and I love learning the motivation behind projects.

Also totally agree about @psobolewskiPhD being an inspiration. If it wasn't for him diving head first and asking questions I probably wouldn't be here today. (and it still took me years to do more than report issues)
