Modify firmware for custom events

What would be the best way for me to modify this example application so it sends location and temperature data to a pubsub topic, should I do it inside Tracker::loop, TrackerLocation::location_publish or somewhere else? 

Im not really experienced on building IoT software, any suggestions would be appreciated
