improve Installer script to allow `--non-interactive` option

The installer script is storing the jwt-secret and the admin-password as plain text in the readme. We want to get rid of it and remove the warning.

I’m coming back here regarding what was mentioned in issue #498 about improving the installation script. Just to make sure I’ve understood correctly what you’re asking for: you’d like the installation script to support two ways of operating, right?

• A first one where the entire script would be fully interactive and therefore wouldn’t take any CLI flags. This would be the default installation.
• Or, by using for example a --non-interactive flag and then providing all arguments via CLI flags, which would prevent the interactive mode from starting.

Is this scope correct, or did you have another approach in mind?

I’ve started the issue on this PR draft #539. Regarding the .env file, would you like it to replace the CLI flags, or be an alternative way of doing things? Both are possible, so I’d like to know what you would recommend.

At the same time, I’m also refactoring the installer, splitting it into functions to make both the code and the script itself simpler, clearer, and more modular.
