Implement missing unit tests for `xcm_weights` in mainnet runtime

At the moment we don't have any testing supporting the configuration implemented in https://github.com/r0gue-io/pop-node/blob/main/runtime/mainnet/src/config/xcm_weights.rs.

Proper testing should be implemented such that we can easily identify differences in resulting weights maybe coming from other changes within the runtime.
