Fix disconnected SNO to apply proper IDMS and catalogsource

Disconnected SNOs do not currently apply the correct IDMS manifest [here](https://github.com/redhat-performance/jetlag/blob/main/ansible/roles/sno-post-cluster-install/tasks/main.yml#L81-L84). They should follow the same behavior as disconnected MNOs [here](https://github.com/redhat-performance/jetlag/blob/main/ansible/roles/mno-post-cluster-install/tasks/main.yml#L102-L105).
