assisted-service pod doesn't pick up new configuration when deploying a disconnected IPv6 deployment after an IPv4 deployment

After performing an initial IPv4 deployment, switching the configuration to a single-stack IPv6 deployment does not reconfigure the assisted-service pod. Consequently, the IPv6 deployment fails because it's unable to pull the assisted-installer-controller from the mirror registry.
