make circuit stats shows `ShardRAMCircuit`

this issues reported after #1084

after #1084, we need to differentiate opcode circuit/table circuit in another way.
It's better to refactor https://github.com/scroll-tech/ceno/blob/master/ceno_zkvm/src/bin/riscv_stats.rs for retrieve circuit information in more robust way
