Update requirements-client.txt and requirements-server.txt

Loading the server models fails under the recent release of NumPy 2.0. This PR adds a specification on numpy version to solve this problem.

Also I want to mention the problems I found during the setup:
Maybe I can add an FAQ?

• My console was default to a font (consola) that doesn't support CJK characters. And I thought the problem was in text encoding.
• I saw in the image that there was a link for "model" in the screenshots, and I used a "windows shortcut" link. Later I see it has to be a symbolic link. An alternative to adding this to the FAQ, maybe consider adding a "model folder path" option?
