Fix rdkit repo

This PR introduces 2 small changes:

• The rdkit-pypi was deprecated in favor of rdkit. Edited pyproject.toml to reflect this change.
• Added the --wheel argument to install.sh that skips pip installation. This allows for more fine-grained control over the installation procedure.
