Minimal changes to make signet pallet compatible with new signet API

Description

rename sign_respond to sign_bidirectional
rename read_respond to respond_bidirectional
move from slip44 standard to caip2
remove redundant schema args

How Has This Been Tested?

E2E tests for sign and sign_bidirectional
