Introduces GPU support in the SDK and minor CI maintenance.

• GPU support: Adds gpu field to Instance with new InstanceGPU type (mdev_uuid, profile); adds gpu to InstanceNewParams with InstanceNewParamsGPU (supports profile), including JSON marshaling helpers
• Tests: Updates instance_test.go to pass GPU profile in Instances.New example
• CI: Upgrades actions/checkout to v6 in ci.yml
• Spec metadata: Updates .stats.yml to new OpenAPI spec URL and hashes
