feat: Align main branch to eudiw-main with ECDH-ES encryption

Short description

This PR aligns the branch main with eudiw-main which adds support for the ECDH-ES encryption.

List of changes proposed in this pull request

• Update JOSESwift dependency for iOS;
• Update the native method to support both RSA and ECDH encryption;
• Update the javascript bridge and the example app accordingly;
• Add a .ruby-version file;
• Align the package version.

How to test

This can be tested with the added button in the example app. Reinstall the pods before trying on iOS.
