This PR:

Bumps up dependencies
Partially rewrites tests for JUnit 5
Reorganizes repository structure
Changes Gradle build config to take advantage of the Java plugin
Removes deprecated Gradle keywords that resulted in build failures (see https://stackoverflow.com/a/66910991 for context)


          Fix broken Gradle configurations
